Several Southern California restaurant chains are staking their claims on the Inland Empire. John Plessel has a rundown of several new and soon-to-open eateries with menus ranging from burgers and Mexican food to soft-serve ice cream.

Craft Brewing Company, founded in Lake Elsinore in 2009, is moving its headquarters to Riverside but it’s not leaving its original hometown. It is opening a restaurant in the Outlets at Lake Elsinore.

If you’re looking for novelty foods, Knott’s Berry Farm is adding an extra week to its annual Boysenberry Festival and introducing such items as an open-faced chicken sandwich on a boysenberry doughnut and crab sushi with boysenberry aioli.
